I quite like this as well.  So far I've limited the impact of grit in 
my game by only handing it out at the end of major campaigns (we've 
been playing for over a year now and they only have 2 grit) as I 
thought that they would hit the "grit" ceiling too soon and the whole 
horror element of the game would get lost.

I also agree that the bonuses are a bit high,   I would probably 
reduce it a bit to:

+1 wound in every location.
-1 to all wound penalties
+1 on all fear checks.

But on the whole a great idea and one that I'll certainly use, 
assuming any of my players' characters survive long enough of 
course.
