Personally I like the chip method.  For 1, use minis
but not always.  If I'm not using minis I just keep
track of would levels.  For example if my posse is
fighting 5 creatures then as they get wounds instead
of chiping them I just mark it off as having been
wounded 1 more time.  When I hit 5 it's dead.

The reason I like the chip method better than the hits
method is that it allows creatures to last longer and
there by make them or fearsome.  If you use straight
hits the creature usually goes down at 30 hits. 
However, if you use the chip method you discard any
excess hits that don't hit a multiple of the creatures
size.

Consider this, albeit contrived, example.  Assume that
a creature of size 6 takes the following hits:

11, 11, 11, 11, 11,

Using the Hits method, the creature would have been
dead on shot 3.  Using the chip method it lasts for
two more shots.
