Could not find anything about plans for a build you own, but I can think 
of a few design elements.

Wood paneling walls, or red velvet wallpaper.
Stuffed jackalope head.
Spittoon.
Brass rail bar.
Poker table.
Dear antler or wagon wheel chadaleir.
Saw dust on floor.
swinging doors.
Upright Piano.
Salloon gal.
Brass latern light fixtures.
Old fashion looking signs, wanted posters, framed prints of period 
newpaper headlines. (Perhaps a doctored up Epitaph.)
Shotgun behind the bar.
Mirror or naked lady painting.
