Yes, in the section on Harrowed it says they sleep.  It's not normal sleep 
because the manitou is keeping one eye open (it is stuck in this hunk of meat 
too) but it is sleep.  If the character tries to go without they can, but the 
critter inside them needs a little down time for maintenance and will take it 
by force if necessary.  It won't make its host fall asleep in the might of a 
fight, but it could make him fall asleep on watch or just drop in his tracks 
while walking along.

So the answer is yes they do sleep.  Not in the sense that the character 
needs to rest, but because the manitou forces a few hours of down time each 
day for maintenance.  (That's in the main rule book.  I've got to figure a 
way to bring those things to work so I can quote page numbers)
