Actually I don't think that the character would have too difficult a 
transition to make.  The RC church already has saints which hear prayers for 
aid, so adding a few in a space of 200 years doesn't seem to be too much of a 
stretch.  Even if the templars aren't strictly RC, they are set up as a 
quasi-religious order, so I'd let the character go with his existing faith.  

You also mentioned that you might give them some points for beefing up their 
characters -- don't forget the minimum skills you have to have to be a 
templar.
