Also, remember that skills deteriorate after a period of disuse.  If your
accountant hasn't done any accounting in 13 years, he might be a little
rusty.  He probably won't forget the basic math required for his job, but he
might forget things like what deduction goes where, the best loopholes, etc.

A high-level skill indicates some frequent use.  If a character has a high
level of, say, Professional: Law, it's possible that he acts as a kind of
wandering mediator or somesuch (a good choice for Law Dogs).
