We are now down to a massive 4 players, one of which is leaving the area
at some point in the near future. I generally like posses of 3-5 players.
4 was always ideal.
I find that the fewer the players the more fun they have because you can
devote a larger % of your time to their character. But there's a trade off
because if the posse is too small then they will lack the power and
diversity of skills to survive a wide range of threats.

The posse's right now look like this:

Deadlands:
Martial-arts Gunslinger from HoE
Indian Brave
Indian Brave
Alchemist (but he's probably going to change to a voodooist character)

HoE (the posse I play in, not the one I'd run The Great American Mall on):
Super Mutant Gunslinger (he can shoot radiation from his chest, but can't
talk or turn it off completely, think Chamber from the Generation X
comic).
Martial-arts thief
Non-junker mechanic
Doctor

HoE (the posse I'd run the adventure on):
Templar Martial artist
That's it right now. But if I had to guess what others would play I'd
throw in a doomsayer and a junker.
