This should probably be a GM's call... but, as for myself, the ansewr is a
simple yes. The Sneak's power gives him the ability to avoid detection, and
would assist against electronic means of detection. For a nice way of
looking at it:

Could a sneak cross a bed of leaves without making much rustling noise? I
can see that. So, a Sneak should be albe to get their bonus against
pressure sensitive floors.

Can a Sneak cross a room that has a guard? Sure, I can see that, too.
Hence, if the room has a camera, it can also likely be avoided by the
Sneak.

Can a Sneak get past motion sensors? It would take moving really slowly,
but it's well within believability.

Can a Sneak get past IR sensors? It depends on how you mean. I would say
that a Sneak's pwoer would give him insight on ways to defeat an IR sensor,
however, I don't believe that it would allow him to just walk into an area
with IR sensors wihtout taking any precautions.
