If I read this correctly you are incorrect. In Deadlands and HOE you do take you 
opponents fightin' skill into account
From page 127 of the revised player's guide:
The Target number of the attack is faid plus the opponents fightin' aptitude for 
whatever weapon in his hand. A cowboy gets his fightin' brawlin' skill if he is 
empty handed or using some sort of improvised club- like a bottle or pistol butt.

Now if you meant that you can't dodge a fightin' roll that is correct. You do 
get to make a fighti' roll to essential parry the attack if they are using 
fightin' . That is a on page 129 under vamossin'
 
Now I will add my imput on the BNW part. From what I have seen speedsters tend 
to work best as hit and run.  Using first move they  run in. Attack a couple 
times and run out. If they stay in close you always should try to dodge the 
goliath. I don't care if you have hand to hand 5 it will hit the speedster. The 
speedster will have more actions most likely so they afford to blow a few to 
dodge the goliath. remebr the goliaths are slow so they may only get two 
actions.  A speedster should get on average 3.
