Another option would be to institute "wind" in BNW.
Basically in Deadlands there are three things that happen when you get
hit.
Damage- basically the same as BNW, roll damage, divide by size, apply to
hit location
Stun- Again similar to BNW, although the TN are different
Wind- every one has wind equal to their spirit + vigor stats (14 avg.) 
Whenever you are hit you take d6 wind per wound level. When your wind goes
to 0 you are "winded" and can do nothing but lay there until you get back
up to at least 1 wind (you get like 1 back a minute). You also use up wind
when you do things like sprinting.

So, if you wanted, you could add wind to BNW. Each person has wind equal
to their # of spirit dice + their # of str. dice. Every time they take a
wound they take the damage in wind (as well) - a str. roll. For
non-edged/piercing attacks you can choose to just do wind damage. 
This way a big guy can knock someone out without putting them in a coma
first, if they wanted to.
