Here's how it works:

>Knife 3d8/2d6+1d6

In this case, the number before the slash is the character's skill with the
weapon.  So when rolling to hit with a knife, the Undead Outlaw would roll
3d8.  Emile Bouchard with a knife would roll 3d6 to hit.

The number after the slash is the amount of damage done with a succesful
hit.  Knife damage is STRENGTH + weapon damage.  So for the Undead Outlaw,
it's 2d6 strength + 1d6 from the knife.  For Emile Bouchard, it's 4d4
strength plus 1d4 from the knife... he must have a smaller knife.

Works the same for the pistols, only there's no strength damage on those.
