If it's a stated one-shot, I consider killing players completely fair.

I introduce people differently depending on what kind of player it is. 
if it's a seasoned gamer, I just throw them to the proverbial wolves, 
and help them with the basic game concepts. For others, I make sure that 
the first session is a low-key adventure for a while so they can explore 
and get used to the game without being in a combat setting.

Deadlands is great for this, as there's a lot of town stuff. WHile in 
town, the posse may become involved in a wide range of plot threads that 
keep things interesting, but are still good for a new player to get 
eased in.
