Actually, we have a pre-generated Gunslinger PC who got his start as a
cavalry man with the Brits in Canada (don't ask, it's a long story). What we
simply did was give him a (slightly modified) level of Fighter, as per D&D
D20. We removed the armour and shield proficiency, and gave him Firearms,
Simple weapons and Exotic weapon (cavalry saber) and Mounted Combat. He kept
the d10 hit die. We also tweaked his class skills a little bit, but I can't
remember how at the moment.

Another option is to use the Warrior NPC class from the Dungeon Master's
Handbook, substituting relevant Weapon Proficiencies for what's given in the
book. We initially considered doing that for the PC above, but it seemed
unfair to us to force the player to have a slightly sub-PC level class.
