my guess would be that the character would have the following (assuming he 
learned entymology at a college before the war)
    entymology-4or5
    biology-3
    general science-3
    chemistry-1or2

 these levels would probably represent the bulk of his biology/entymology 
major at college

 as far as your other question I would point out a few things
  1- a high knowledge indicates the common logic skills that go into general 
science 
     courses
  2-It is very hard to define what is known with general science
  3- most scientific minds (mainly in the chemical/physics) fields spend more 
time dealing with mathematical relations and really don't remember/use those 
minor facts unimportant to them
  4- on a good day, most biology is only half a science  (sorry, just my 
opinion)
