Well, according to Last Crusaders, they can be of eany faith as long as the
believe in the saints.  After all, one of the Saints is a Mormon.  So, you
can be of any faith.  Page 54 of Last Crusaders
"Your character must have "faith".  Simon has not made religion an official
part of the order, though Christianity was integral to the old Knight
Templar and the Freemasons as well. Simon is a Christian himself, but he
knows that in this day and age there are many other religious beliefs, and
most all denominations believe that God has forsaken the world anyway."
