1: Are harrowed common knowledge(or at least common
knowledge/myths to indians) by the time of the hoe
setting.

medicine men are probably familiar with them, and warriors could go either way. Harrowed were public knowledge, but still little known there was even a civil rights group for harrowed before the bombs the DPLF (Dead Persons Liberation Front) and they even had a magazine.

2: Would a rituals skill encompass alot of occult
knowledge or is it just centered on cause and effect.
(keep in mind his character is a warrior not a camp
wise man)

for a warrior, probably not.

3: Would his guardian spirit outright tell him he has
a manitou in him.
   -I figure this would be up to the GM, i'll probably
go with cryptic statements or feelings along the lines
of "you carry a great evil" but make it seem like its
talking about his bloodthirsty flaw or something along
those lines.

yeah, up to the Marshal, but If I were him i'd make your favors cost extra appeasement for being possessed by a demon. nature spirits don't like that sort of thing.

4: Does the kind of meat a harrowed eats matter for
healing purposes, can it be cooked or does it have to
be raw.
 
nope. meat is meat. I had a harrowed in my group witha bad habit of collecting his victim's left thumbs and eating the flesh from their right calf.... he healed just fine, but he went down the road toward servitorhood.
