How old is Caesar would be 1st thing to take into consideration 
and if orthopedically sound is another?  I don't want to burst a lot of 
people's bubble but a lot of therapy organizations won't accept a 
dog until a minimum age of around 1 yr.  Evelyn's case is 
exceptional in that she runs the org I think.  I know the organization 
mine are certified under, Therapy Pet Pals of Texas, there is a 
minimum age of 1 yr required.  

Show dog only means can't be shown in conformation when they're 
neutered.  You can still do obedience and you can be working on 
getting that CD and beyond.  You can show in agility and do agility 
for fun and this takes guidance from a good instructor if you've still 
got a pup because won't be able to do all the fun stuff until those 
bones are set.  There are 2 pyr draft titles to work towards, DD 
(Draft Dog) and DDX (Draft Dog Excellent).  I belong to a carting 
club and so once that draft dog is trained and/or has their titles can 
do fun stuff like demos and parades.  There's also stuff like tracking 
and working dog and water dog and musical freestyle........

links.  So, take your pick of activities that you think you and 
Caesar would enjoy doing together and start looking into them.
