I don't think we have ended up talking about the same thing.  While I have no problem with your position that we are what we eat, there is no evidence that I am aware that diet will change the genetics of the individual eating or even will change the genetics of its offspring.  If there is some evidence, maybe someone could source the information so that I may educate myself further. 

Genetics will be determined by selection (natural or breeder) and mutations that occur.  Good diets may help health, but to my knowledge will not change genetics of the organism no more than normal mutations occurrence of the genetic makeup.  I guess if one consumed a diet of radiation contaminated water and food that might be an exception as may have occurred at "love canal," but I don't think that's what this thread is about either.  Good health from diet will certainly aid fighting off the effects of the genetics that may be playing its role, but will not to my knowledge change that genetic property.
