Challenges, how bout.
1)since hes such a devout catholic remember that this 
puts him in a chain of command, from the pope on down 
to the local preist, you can send him on missions 
that require him to face challenges that play to his 
weaknesses instead of his kick ass for jesus 
strengths.
2) how bout giving him a holy office in the church 
itself that forces him to deal with mundane challages 
such as dealing with politics and such.
3) Give him a arch nemisis who goal is to taunt, 
hinder and temp him with out ever getting close 
enough for the charater to plaster it with his holy 
powers. More of a annoyance then a challenges but the 
player should be tickled to have attracketed the 
personel attension of a real power of darkness and it 
should challange him to find a creative way to track 
the sucker down.
4) people tend to hear about truly holy men, give a 
collection of followeres and sidekicks who follow him 
around begging for his blessing and singing his 
praises, not to mention getting kidnapped by every 
bad guy around and other wise getting into trouble. 
Add in a con man who starts to collect money for the 
player's "ministry", and some young women who just 
what to get close to god by way of the charater.
5) send him up against some border line villians, 
guys who make pacts with dark powers to get revenge 
on some truly evil scum, guys who are under a curse 
to kill every full moon in the shape of a were goat 
but have no memories of it, give him opponets who 
need to be saved rather then killed.
6) Catholic you say, have him stop in a few towns 
with a strong prodestant/bathist/whatever anti-pope 
preacher to hinder the group in whatever thier up too.
