Friekin' turn undead.

I have a deadlands d20 game with a deluded blessed in it who keeps blasting
through the walkin' dead (hell in one encounter, he didn't even bother
getting out of his bedroll).

Then he's prone, no Dex bonus to AC.

Normally this would be a big deal, but the adventure is based on an unholy
allience between bayou vermillion and sweetrock in the town of tuscon.

Any ideas on how to handle the blessed?

Turning has a range of 60 feet, Deadlands walkin' dead are free to use
ranged weaponry at that distance.
Limited number of turning attempts per day. Break up your walkin' dead into
waves to force him to use his turning ability inefficiently.
Walkin' dead are free to take cover behind terrain while turned, no need for
them to stagger about 60 feet away waiting to be picked off with lucky head
shots.
Bayou Vermillion walkin' dead are not the stock DL walkin' dead, add a
little something extra to 'em like Turn Resistance +2 or +4 if a Bokkor's
handy.
Walkin' dead have low CR's, if the Blessed gets cocky send a poop-load of
deaduns his way, wave after wave after wave.
Obligations to preach and convert the wicked are absolutely essential, if
the blessed fails in his duties to the Allmighty strip away his powers for a
spell.
