Unofficially - I would say that it would keep fighting in a reduced capacity.
This "ability" of the doomsayers can become one of two distasteful effects:
1)  Yet another creature that just can't be stopped unless you get the
proper magic sword to use against it.  After 45 wound levels to the head
and 37 to the chest, it still keeps on swinging at you.
2)  Drops with 5 wound levels only to come back later.  The standard party
would grab the body, walk it to the nearest friendly doombringer and have
it axed there.  Of course, there would have to be the daily bullet to the
brain sequence if the nearest doomsayers was a couple of days off...

Both seem somewhat anti-climatic, don't they?
