Not to get into semantics, but....
Technically, you vamoose in hand to hand. You make a fightin roll (not a
Dodge roll) to get away. This wasn't explained very well in the original
Deadlands rules, nut the Tales of Terror update *AND* the HoE rulebook very
clear state this (sorry no HoE pg reference here at work.

I'm on the fence....
On one hand if you are bobbing and weaving, it would probably be harder for
everyone to hit you. On the other hand, if a bunch of people are drawin a
bead on you and you are concentrating on trying to avoid one of them, you
really wouldn't know where to dodge for the other guys. Also, in terms of
mechanics, being able to dodge multiple attacks with one roll makes Dodge
way to powerful.
In HtH, you have limited space, so you would probably end up jumping right
into another guy...
