These numbers are all off the top of my head, but here goes:

Say it took Simon 3 years to form the templars from judgement day (I don't
have books with me). So that means the templars have been around for 10
years.
Say Simon trained 1/2 dozen that first year to go out and do his works. 
So 9 years ago there were 7 (Simon + 6) templars.

Now say that since then roughly 1/2 the templars have had squires at any
one time, and Simon doesn't teach any because he's too busy. So...

So there are roughly 200 templars out there. But wait, who are we kidding,
at least a 1/4 of them have died/retired/not passed squire-ship. So let's
say 150 templars TOTAL in the wasted west.

This kinda makes sense (that the numbers would be small) given the
training scheme (one squire at a time, a year of servitude). Last
Crusaders even talks about this and how much more prolific the
Anti-Templars are becoming because they don't have the same requirements.

Sure I missed stuff, anyone?

Someone said 2% (one week out of every year) which sounds reasonable.
That's about 4.
