The pair (or series) of games would be a single game as far as the rating 
system is concerned.  If you resign one game, you've lost.  Until both 
(all) games are completed, it's a game in progress.

It's not necessary (though it would be nice) for the games to be 
simultaneous.  The way it's usually done face to face, you play out the 
first game, count the score then start the second game.  On the server it 
would still be the same game.  Call each board a round.  You play round #1 
until all possible moves have been made, then the board is cleared and you 
start round #2.  After both (all) the rounds are complete, tally up the 
scores of the rounds and name the winner.

That's the idea.

Yes, but that would be a quite different game.  What Thomas and I are 
asking for is the way the game is currently played face to face by skilled 
players.

He asked "are there?"  Since you're the expert, I take it there 
aren't.  But are there any games where there are multiple rounds?
