Robyn, I would think that to some degree the fact that dogs can reproduce
faster means more mistakes can be made, as well as population getting out
of control.  I also agree that not as many people can breed these other
animals that way.  And maybe because you are looking for something more
specific when you breed a cow, horse etc.
The average dog being bred that way is not being crossed for the right
reasons.  Mostly lazy types not wanting to put out money, and they
"think" they are breeders.  Certainly dogs do get bred that way, and we
have new breeds to show for it, but it usually takes a lot of work to get
them to reproduce true.  I had a guy that wanted to cross Mastiffs and
Rotties, to make some super hunting dog ( in his mind ).  I pointed out
that either breed would serve that purpose, as well as any number of
other breeds had already been bred for what he had in mind.  Didn't sell
the Mastiff to him, but I know darn well he would have gotten one
somewhere. And of course a lot of breeds are already crosses of something
else to be what they are, so a lot of times your not really gaining
anything but a form of repeat breeding.  I think that maybe because dogs
are easily available, both to get and to keep, that more of it goes on,
with less and less good reason for it.  I do think that horses are
beginning to get out of hand in that breed registries come up for
everything.  The horse is 1/100th something, and it is register able (
sarcasm here people ).  I am sure that someone with more "smarts" as
regards the elements of breeding can really answer your question for us
