Sariena, welcome to the list, and sorry to hear about your first
experiences with a pyr. We have dealt with a very dominant puppy, who
needed the "boot camp" routine from day 1, and now have a female who has
been inordinately shy since puppyhood. Neither of them was ever other than
totally gentle and reliable around us and with children. For all Ivy
Rose's fearfulness, she never so much as growls, even if she's cornered
(for example, by Peg's son, who wouldn't take "no" for an answer when she
wouldn't come to him!). 
It sounds as if you are doing everything you can for Zeus and have good
back-up plans, but I know I'd never feel too comfortable with him around
young children. I would second others' advice, that you have a really good
veterinary work-up done, if you haven't already, and also look into the
background of the breeder, parent dogs, etc. if that's possible. This is
really not usual behavior for a pyr.
