I have a player in my group who always plays steadfast, reliable
characters...

... except when we play Amber.

No matter how reliable he seems, and how good friends his character is with
any other character, in Amber he's always the guy who turns bad, attacks the
other characters, plots against them, etc. Always. You can almost rely on
his unreliability.

One time, to our astonishment (and my glee, since I was the GM at the time),
in the middle of the entire group trying to outwit and defeat Brand, he
totally out-of-the-blue trumped Brand and offered his services, along with
copies of the trump cards of the other characters (which Brand did nasty
things with).

I guess it's amusing in a way, but them Amber leads itself more to such
things. In Deadlands, there is no place for such scheming IMO. DL is deadly
enough that if you can't reply on your other posse members, there's little
hope for you.
