Just before our Echo died, she exhibited a lot of the same behaviors.  The
vet later told us that it was most likely due to her illness--I was very
young and I don't recall exactly what it was that killed her, but I can
remember her being fine one minute and the next minute needing to be
muzzled, etc.

I don't think this is typical for Pyrs... Sam (our current Pyr) never showed
any signs of that sort of behavior.  He's in excellent health, and he's only
ever shown aggression toward strange men approaching me or Mom on the
street, and some of my younger cousins who were hurting my dad (my dad
wasn't in good health at the time and the kids were too rowdy for him).
Pyrs are very protective of their people.

If your Pyr's gonna be a working dog, you can train (to an extent) your pup
to be somewhat less protective.  All dogs can be unpredictable but in my
experience you're pretty safe with a Pyr.
