Well, they're maybe not dead (again), but they do suffer of wound penalties 
and such. Besides, when they're shot up bad, they can't do much harm any 
more. I remember that I marshaled Last Stop too, and I used the detailed 
system for the Undead attack (ah, the old days...). The fight didn't take 
too long, since it was a combat-oriented party and all, but there were some 
classic moments like when a Zombie who had his legs blown of still crawled 
after one of the heroes until the Texas Ranger walked up to him and blew 
his head off.

That said, It depends on how important the encounter should be. In this 
case, the fight obviously took too long. Maybe you don't have a very 
combat-oriented posse (or one of the reare cases - at least in my 
experience - of players who prefer riddles over combat). In such a case, 
I'd reduce the number of attacking Undead, as long as they are still a 
challenge, would cross off my sheet the first few after they took some 
hits, and one or maybe two I'd keep for the end, when the posse is running 
out of bullets, has to reload and that crippled zombie is still trying to 
eat your brain.
Hell, I even had one heroe attacked once by a Zombie who had lost his arms 
and legs. But the gunfighter stood next to his head, so ,what do you know, 
a second later the Zombie bit him in the ankle. Didn't make any damage 
through the thick leather of the boots, though, but it did earn the Walking 
Dead some respect. ;-)
