We usually change our pups over to adult food by 6 months of age.  The reasoning behind this is to try to slow down their growth since too rapid growth can cause problems. Some of our friends never feed puppy food and their dogs are fine. Now that there are new puppy foods for large breeds with a lower protein count (beware of the puppy food with very high protein), I would think it would be ok to keep them on puppy food until 12 months if they still like the food.  Our pups seem to prefer the adult food.
